Freekeh Soup

Ingredients

  • 3 tablespoons olive oil
  • 1 onion finely chopped
  • 2 chicken breasts cut into cubes, optional
  • 1 cup Equal Exchange Freekeh
  • 4 cups chicken stock vegetable stock or water
  • 1 teaspoon all spice
  • 1/2 teaspoon cardamom
  • Salt to taste

Instructions

  1. In a pot add the olive oil and onions
  2. Saute the onions over medium low heat until they are transluscent
  3. Add the chicken breast cubes (if using) and cook until slightly golden brown and cooked through (5- 7 minutes)
  4. Add the Freekeh and stir for 5 minutes to toast the freekeh slightly
  5. Add the all spice, cardamom and salt
  6. Add the chicken stock and simmer for 20 - 30 minutes
  7. Taste and adjust the salt if needed.
